2 lb Lean round steak
2 Green peppers, chopped
2 tb Minced dried onion
1 c Beef boullion
1/4 c Soy sauce

Step 1:Cut steak into serving size portions. Place half the steak in Crockpot. Arrange green peppers on steak. Place remaining steak on top.
Step 2:Mix remaining ingredients and pour over meat. cover and cook on Low setting for 8 to 10 hours, or high for 4 to 5 hours.

1 Cube beef bouillon

Directions to make Veal Schnitzel

Step 1:Pound meat very thin. Salt and pepper. Dip veal into egg, then in bread crumbs. Heat oil and butter together over medium heat. Saute veal until golden (about 15 minutes). Remove to another pan and keep warm.
Step 2:Add onions to the skillet used for cooking veal. Saute until limp but not brown. Add green and red pepper, water, bouillon cube and mushrooms.Cook until just tender.
Step 3:Combine cream and flour; then stir into vegetable mixture. Heat until just thickened. Pour over warm veal .

5 lb Beef chunk eye roast, boneless

1/4 c Dry sherry wine
1 t Ginger, fresh grated OR 1/4 ts ground ginger
1/2 c Water
4 oz Sliced mushrooms, drained, save liquid
2 tb Cornstarch

Directions to make Beef Pot Roast

Step 1:In a Dutch oven, or large pan with a tight-fitting cover, brown meat in fat. Season with salt and pepper and remove from pan. Pour off fat drippings.
Step 2:Add onion, green pepper, soy sauce, wine, ginger, water, and mushrooms; mix well.
Step 3:Return meat to pan. Cover and simmer for 3 1/2 to 4 hours, or until done. (Or cook in a 325F oven for same amount of time.) Turn meat once to cook it evenly throughout. When done, remove meat and keep warm.
Step 4:For 2 cups of gravy, pour liquid from pan into a 2-cup measuring cup. Let stand for 1 minute to allow fat to come to top. Discard all but 4 Tablespoons (or less) of fat. Add enough water (or other liquid) to measure 1 1/2 cups of liquid. Return to pan. In same cup, measure 1/2 cup cold water and blend in flour. Add mixture slowly to liquid in pan. Bring to a boil, stirring constantly, and cook until thickened, about 3 minutes. Slice meat; serve with sauce over hot rice.

Step 3:In large bowl, beat egg whites until stiff. Fold into macaroni mixture. Put into buttered 12 inch quiche dish or a 13 x 9 inch baking dish. Place a shallow baking dish with 1-2 inches water on lowest rack of a 325 degree oven.
Step 4:Place quiche on center rack. Bake until set and knife inserted in center comes out clean, about 1 hour. Let stand 5 minutes before cutting. Garnish as desired. Serve with salsa.
