4 pound pork, loin roast
6 each apples
1/4 cup apple juice
3 tablespoon sugar, brown
1 teaspoon ginger, ground

Directions to make Apple Glazed Roast Pork

Step 1:Rub roast with salt and pepper. Brown pork roast under broiler to remove excess fat; drain well.
Step 2:Core and quarter apples. Place apple quarters in bottom of crockpot. Place roast on top of apples.
Step 3:Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well. Cover and cook on Low 10-12 hours, until done.

1/2 c Brown rice vinegar
2 ts Molasses
2 tb Onion, grated
4 To 6 lb. turkey breast, cut in 1 inch cubes
1 tb Vegetable oil
2 Garlic cloves, minced
1 c White grape juice
1/2 c Water
1 tb Lemon juice
1 ts Freshly grated ginger
8 oz Dried apricots, slivered
2 tb Minced fresh cilantro

Directions to make Apricot Turkey

Step 1:Combine brown rice vinegar, molasses, and grated onion. Add turkey cubes; toss to coat turkey with marinade. Refrigerate for several hours or overnight.
Step 2:Drain turkey, reserving marinade. Add oil to heavy nonstick skillet, set on medium heat, and brown a few turkey cubes and the garlic at a time (if you crowd the pan, the meat will steam, not brown). Put browned turkey in a large casserole.
Step 3:Combine reserved marinade, white grape juice, water, lemon juice, and grated ginger; pour over turkey. Stir in apricot slivers and cover. Bake at 325 F. for 30 minutes.
Step 4:Turkey should be tender. Stir in cilantro. Serve over steamed rice.

Add the bell pepper; continue to cook and stir for another 5 minutes. Season with curry paste and cinnamon; cook for a few more minutes to intensify the flavors.

Step 1:Light a medium-hot fire in a BBQ grill. Pound the chicken breasts slightly to flatten evenly. Season lightly with salt and pepper. finely dice the red pepper
Step 2:In a medium bowl, stir together the pinepple with its juice, sliced green onions, the red pepper and the chopped cilantro. Season with salt and generously with pepper to taste. Let stand at room temperature while you cook the chicken.

Step 1:In a skillet, melt the butter. Add the apple, onion and curry powder. Saute for 5 minutes, blending well. Stir in raisins, 1 cup of the reserved chicken broth, and the Coca-Cola.
Step 2:In a bowl, mix flour with the Half and Half, stirring until smooth. Add the salt and white pepper to the onion apple mixture. Stir and cook over low heat until thick and creamy. Taste for seasoning. Add the chicken and turn into a covered container to chill overnight.
Step 3:Reheat in the top of a double boiler over hot water and serve on cooked rice with a selection of condiments; including, grated coconut, chopped peanuts, chopped raw onions, raisins, sweet pickle relish, chutney, chow chow, andor lime wedges.
