Ingredients to make Sausage Corn Chowder

1 Polish sausage, sliced thinly
6 sl Bacon, chopped
1 c Onions, chopped
1/4 c Flour
2 c Chicken stock
1 c Water
4 c Corn
2 c Potatoes, cubed
1/8 t White pepper
Red pepper sauce
2 c Milk
2 T Butter

Directions to make Sausage Corn Chowder

Step 1:In a big saucepan, brown the sausage and bacon until bacon is crispy. Remove sausage and bacon with a slotted spoon, and drain on a paper towel. Discard most of the fat; leave enough to cook the onion.
Step 2:Saute onion in reserved fat until tender, about 5 minutes. Gradually stir in the flour. Add stock and water, stirring constantly. Add sausage, bacon, corn, potatoes and white pepper. Add red pepper sauce to taste. Heat to boiling. Reduce heat and simmer, covered, for 15 to 20 minutes. Stir occasionally.
Step 3:Add milk and cook until soup is heated through and potatoes are tender. Top with butter and serve.

1 c Hot water
1 Cube beef bouillon

Directions to make Veal Schnitzel

Step 1:Pound meat very thin. Salt and pepper. Dip veal into egg, then in bread crumbs. Heat oil and butter together over medium heat. Saute veal until golden (about 15 minutes). Remove to another pan and keep warm.
Step 2:Add onions to the skillet used for cooking veal. Saute until limp but not brown. Add green and red pepper, water, bouillon cube and mushrooms.Cook until just tender.
Step 3:Combine cream and flour; then stir into vegetable mixture. Heat until just thickened. Pour over warm veal .

Step 1:Preheat the oven to 180-200 C. (medium). Season the chicken pieces with the flour, salt, and pepper.

Step 2:Coat veal pieces with seasoned flour. Add crushed garlic to hot oil. Brown coated veal pieces in hot oil.
Step 3:When veal pieces are browned, add boiling water, lemon peel, sage and cayenne pepper. Stir to combine. Heat, covered, in Microwave Oven 15 minutes or until veal is tender.
Step 4:Remove lemon peel and stir cream into veal mixture gradually. Heat, covered, in Microwave Oven, an additional 4 minutes. Stir occasionally. Garnish with chopped parsley before serving.

Step 2:Mix milk and egg. Dip chicken into milk mixture; coat with bread crumbs. Heat oven to 375.
Step 3:Heat oil in 10-inch skillet over medium heat until hot. Cook chicken in oil, turning once, until golden brown (add oil to skillet if necessary). Place chicken in ungreased rectangular pan, 13 x 9 x 2 inches with mozzarella cheese. Pour spaghetti sauce over cheese. Sprinkle with Parmesan cheese. Bake uncovered about 20 minutes or until hot and bubbly.

Step 1:Remove backbone from duck and quarter or bone duck, reserving backbone and giblets for broth. Place salt in deep saucepan, add duck pieces and cook 20 minutes. Remove duck, place in shallow casserole and bake at 350F 45 minutes, increasing heat to 375F during last 10 minutes.
Step 2:Combine giblets, backbone and water in saucepan, cover and bring to boil. Reduce heat and simmer 2 hours. Skim off fat. Add onion, celery, garlic and bay leaf to broth, cover and simmer 20 minutes. Strain.
Step 3:Melt butter in saucepan, stir in flour and cook 1 to 2 minutes. Add broth and cook until slightly thickened. Add star anise and green peppercorns and season to taste with salt. Serve sauce over duck.
