Baked Chicken Casserole - This no fuss, baked chicken casserole recipe is as simple as simple can be, and has a little south of the border spice added to it. This meat recipe uses leftover, cooked chicken is oven baked with sauteed onion and garlic, veggies and jack cheese, until steaming hot and the cheese is bubbling, yummy!

Ingredients to make Baked Chicken Casserole
1 tablespoon oil
1 md onions, chopped
2 each garlic cloves, crushed
1 cup chicken, cooked, diced
8 oz frozen corn
2 oz olives, black, sliced
2/3 oz green chilies, chopped
1/4 teaspoon red pepper flakes
4 lg bell peppers, various colours if you wish
1 cup cheese, jack, shredded

Mexicala Meatloaf - This fiery, southern style meatloaf is deliciously distinct! We “fired” this one up with a little Mexican flavor giving it an exceptional cooking aroma, not to mention taste. Fresh chilis, salsa, corn, monteray jack cheese and cayenne are just some of the basic ingredients that make this simple, meat recipe really stand out.

Ingredients to make Mexicala Meatloaf
2 lb Lean ground beef
1/4 c Onion, chopped
1/8 c Green pepper, chopped
1 t Salt
1 d Cayenne pepper
1/2 c Frozen whole-kernal corn
2 Green onions, chopped
1 t Southwest Seasoning’s Ajo Picante seasoning**
1/2 c Plain bread crumbs
2 lg Eggs
1/2 c Pace Picante sauce
2 1/2 tb Green chilis, chopped
1 c Monterey Jack cheese,shredded
1/4 c Black olives, sliced
1 c Chili sauce
** I used 1 teaspoon of Mexican seasoning as a substitution for the Ajo Picante seasoning — it tasted just fine. **
