chk_ench Chicken Enchiladas - This creamy, swiss cheese and chicken enchilada recipe has just the right of Mexican flare. Leftover, or pre-cooked chicken meat, is combined with cream soup and milk creating a velvety texture, that is extremely pleasing. The distinctive swiss cheese adds a unique flavor to this quick and easy chicken recipe.

Ingredients to make Chicken Enchiladas

4 Cooked chicken breasts, cut in bite size pieces
1/2 c Chopped onion
12 Corn tortillas, torn small
2 cn Cream chicken soup
1 cn Milk
1 cn Green chili peppers, seeded, chopped
8 oz Swiss cheese, grated

Directions to make Chicken Enchiladas

Step 1:Combine and mix chicken, soup, milk, onion and chili peppers. In casserole dish, place a layer of tortillas, layer of chicken mixture and layer of cheese. Repeat layers, ending with cheese on top. Bake at 350 f. until hot and cheese is melted.
